Prawns with Garlic Lemon Butter Gnocchi with Gruner Veltliner
Ingredients
• 9 prawns
• 16 oz gnocchi
• 1/4 c butter
• 1 clove garlic
• 1/4 c chicken (or fish) stock
• 2 T cream cheese
• 2 T lemon juice
• 2 c fresh spinach washed patted dry
Cook the gnocchi. We like to use refrigerated gnocchi that you pan-fry to cook. But shelf-stable gnocchi that you boil to cook works well, too.
Sauté the shrimp in some garlic butter.
Whisk sauce using chicken stock, cream cheese, and lemon juice.
Mix the shrimp and gnocchi into the sauce with a few handfuls of spinach.
