Lemon Herb Grilled Chicken with Feta & Balsamic Asparagus

This light and flavorful dish is a perfect match for Mahan Family Wines Sauvignon Blanc, offering a bright and zesty complement to the wine’s crisp acidity and citrus notes.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 bunch of asparagus, trimmed

  • 2 cloves garlic, minced

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon lemon zest

  • 3 tablespoons olive oil

  • 1 tablespoon fresh thyme, chopped

  • 1 tablespoon fresh rosemary, chopped

  • Salt and pepper to taste

  • Lemon slices for garnish (optional)

  • 2 tablespoons of feta cheese

  • 1 tablespoon of balsamic

Instructions:

  1. Marinate the Chicken:

    • In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.

    • Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

  2. Prepare the Grill:

    • Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

  3. Grill the Chicken:

    • Remove the chicken from the marinade and shake off any excess. Place the chicken breasts on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

    • During the last few minutes of cooking, add the asparagus to the grill. Cook for 2-3 minutes, turning occasionally, until tender and slightly charred.

  4. Serve:

    • Transfer the grilled chicken and asparagus to a serving platter.

    • Add feta and balsamic over the asparagus. Garnish chicken with lemon slices if desired.
